Old Vine Reserve Pinot Noir

Seville Estate Old Vine Reserve Pinot Noir is produced with handpicked fruit, mainly from the original 1972 estate plantings in the cooler southern part of the Yarra Valley.
The fruit, mostly destemmed with 30% left as whole bunches, is cold soaked for open fermentation with wild yeast. It is hand plunged daily. Malolactic fermentation occurs during the primary ferment.
After gentle pressing off skins, the wine is run straight to one third new French oak barrels for maturation. It is not filtered or fined, just clarified naturally in the cellar.
Pale red purple, Seville Estate Old Vine Reserve Pinot Noir is light bodied yet complex with layers of red fruits, savoury notes and fine tannins. Natural acidity provides fresh, defined length.
A beautiful Yarra Valley Pinot Noir, released only in exceptional vintages. Cellaring potential is seven years.
